There are so many choices for how to spend Christmas Day, but for me the best option is one based on simplicity and style with the people I care about. The sleep after the long late lunch where everyone has helped to clean up is always special. Biggest thing is organisation and preparation so it’s all a breeze. A stressed host is never fun. Preparation, for me, is all about making a great stuffing for the goose and one of Sassies's chooks the children prefer to the goose (they'll change!!) all the night before. I also make a huge dish of jelly from sparkling shiraz filled with fresh raspberries from our market, sometimes even 2 days earlier. Prepare the ham by stripping the skin, scoring and mixing the glaze with mustard ready, have all the salad ingredients washed, dried and prepped and the goose into an oven bag. Cooking goose on a low temperature in an oven bag is one of the best tips I can give anyone wanting goose for Christmas. That's besides my other best tip - be sure to have music! In my case it’s usually opera - at volume!
