630g fresh peaches for parfait
1 tub greek yoghurt
5g ginger grated
310g fresh peaches for grilling
1 sprig mint

Methods

Heat a large pan of water over a high heat.

Poach peaches in hot water for thirty seconds and then place in a bowl of iced water to stop the cooking process. Remove their skins.

Cut up the flesh of the peach, remove the stones and place into a blender with the yoghurt, and grated ginger and blend until smooth.

Remove blended parfait mixture and place in airtight container in freezer until set.

To serve heat a char grill or griddle pan to high then place the peaches, cut side down onto the hot grill and cook for two to three minutes, then remove and allow to cool for two minutes then serve with a scoop or slice of the parfait and garnish with a sprig of fresh mint.
