Methods

Place the butter into a small saucepan over high heat and cook until it is nut brown in colour. Remove from heat and set aside.

Place the flour and baking powder into a large mixing bowl. Add the warmed honey, egg, milk and nut brown butter then whisk until the mixture forms a smooth batter.

Grease the waffle iron with oil and place it over medium-high heat. Once the iron is hot, pour ¼ cup of waffle batter onto one side and close the iron.

Cook for 3 minutes, then turn over and cook on the opposite side for a further 3 minutes or until the waffle is golden brown.

Remove the waffle from the iron and place it onto a rack to cool. Repeat this process until all the remaining batter has been used.

To prepare the bananas, place a nonstick frying pan over high heat. Once hot, place the sliced banana into the pan and grill until golden brown on each side, remove and set aside.

To serve, top the waffles with the grilled banana, a spoonful of Salted Brandy Caramel, and crème fraiche.
Tip: If you don’t have a waffle iron, you could cook the waffles on a nonstick griddle pan.
